Recipe for Texas Caviar

I probably make this every other week as a snack to have on hand because it is filled with great fiber and vegetables. It is a great appetizer recipe and can be scaled to what you need for your group. This recipe yields 5 servings.

Here is what you will need

  • One (15 ounce) can of black beans – rinsed and drained
  • One (15 ounce) can corn – rinsed and drained
  • 1/2 medium white onion – chopped
  • 1/2 red bell pepper – cored, seeded and chopped
  • 1/4 cup rice vinegar
  • 1/4 cup olive oil
  • 2 tablespoons plus 2 teaspoons white sugar
  • 1/2 can chopped green chiles [Optional]

How to make Texas Caviar

  1. Chop up onion, green chiles and red pepper. In pan, spray olive oil and add the chopped veggies to the pan to roast until a bit charred.
  2. Mix the black beans, corn, green chiles, red pepper and onion in a large bowl.
  3. Stir together the rice vinegar, olive oil and sugar in a saucepan. Bring to boil, then remove from heat and cool. Pour dressing over the bean mixture and toss evenly.
  4. Put into refrigerator to chill before serving. Serve with tortilla chips for scooping.
