I probably make this every other week as a snack to have on hand because it is filled with great fiber and vegetables. It is a great appetizer recipe and can be scaled to what you need for your group. This recipe yields 5 servings.
Here is what you will need
- One (15 ounce) can of black beans – rinsed and drained
- One (15 ounce) can corn – rinsed and drained
- 1/2 medium white onion – chopped
- 1/2 red bell pepper – cored, seeded and chopped
- 1/4 cup rice vinegar
- 1/4 cup olive oil
- 2 tablespoons plus 2 teaspoons white sugar
- 1/2 can chopped green chiles [Optional]
How to make Texas Caviar
- Chop up onion, green chiles and red pepper. In pan, spray olive oil and add the chopped veggies to the pan to roast until a bit charred.
- Mix the black beans, corn, green chiles, red pepper and onion in a large bowl.
- Stir together the rice vinegar, olive oil and sugar in a saucepan. Bring to boil, then remove from heat and cool. Pour dressing over the bean mixture and toss evenly.
- Put into refrigerator to chill before serving. Serve with tortilla chips for scooping.
